Cambridge University Press & Assessment, which is part of The University of Cambridge, is committed to achieving carbon neutrality for energy-related emissions by 2048, with a 72% reduction target by 2030. This has translated into a focus on their food offering, including the launch of Plant Power Week, implementation of VegWare and reduction of food packaging.
Cambridge University Press & Assessment sought better to understand the environmental impact of its coffee offerings and reduce emissions. Using Foodsteps' carbon assessment, they gained insights leading to a shift in sourcing to cut emissions at the farm level. They've introduced oat milk to reduce each cup's emissions and proudly shared their partnership with a low-carbon coffee supplier. Emphasising stakeholder engagement, they aim to educate customers on small swaps to lower their coffee's carbon footprint.
By conducting a comprehensive Life Cycle Assessment (LCA) of Cambridge University Press & Assessment's coffee supply, we were able to provide valuable insights into the carbon emissions in their supply chain, thus empowering them with a clearer perspective on where to concentrate their decarbonisation efforts in the most impactful areas. Today, they are guided by our data and supported by our in-house carbon specialists at Foodsteps, as they take a proactive approach to collaborating with coffee suppliers, baristas, and staff, to reduce the environmental impact across the entire coffee journey, from minimising waste to implementing sustainable practices at the farm level. Moreover, our analysis has also identified a massive carbon-saving opportunity for Cambridge University Press & Assessment by promoting the use of oat milk, which they can now capitalise on.
